Nerikiri of Paraguayan

Today we made Nerikiri of Paraguayan to accompany Matcha tea.

Nerikiri 練り切りis a Japanese typical dessert for the tea ceremony. Nerikiri is made from white beans, glutinous rice flour, sugar and Anko (azuki).


The Paraguayan is a variety of peach and it comes from a mutation of the peach. The shape of this fruit is crushed and its taste is close to nectarine or white peach.



今は6月中旬。スペインはパラグアイヨ(平たく潰れた形の桃です。味は日本の白桃に近いです。)が美味しい季節です。今日はパラグアイヨの練り切りを作ってみました。
