[Japanese Sweet] Ichigo Matcha Daifuku



Daifuku (大福) is a Japanese confection consisting of a small round mochi (glutinous rice cake) stuffed with  sweetened red or white bean paste. Ichigo Matcha Daifuku (いちご抹茶大福) is a ball of mochi filled with anko of Matcha flavour and an entire strawberry. In Japan people eat Ichigo Daifuku or Ichigo Matcha Daifuku in the late winder or early spring because that is when the berries are fresh and in season. It is a delicious Japanese dessert and it is not sweet in the way that Western sweets are. Here is a recipe of Ichigo Matcha Daifuku, easy to prepare and awesome taste!


Ingredients:
150 g rice flour (shiratamako)
180 g of water
70 g sugar
200 g of white bean paste (shiro-an 白餡)
2 teaspoons of Matcha green tea
8 strawberries
a little potato starch (katakuriko)

Preparation:
1. In a bowl dissolve Matcha with a little water.
2. Mix Matcha with white bean paste.
3. Cover strawberries with the pasta.
4. Mix rice flour, sugar and water.
5. Put the mixture in the microwave and heat for 2 minutes (600w).
6. Mix it quickly with a wooden spoon.
7. Heat again and mix again and repeat until it becomes almost transparent.
8. Spread potato starch on a plate.
9. Extendo Mochi and divide it into 8 pieces.
10. Cover strawberry with mochi paste and make round shape.

  2. Hello! Many thanks for your comment! Yes, for this recipe it is very important to use Japanese rice flour (shiratamako). If you do not find shiratamako, then you can use Chinese glutinous rice powder. This is the best sweet of Japan that we are proud of!! Please try!!

  4. Hello! Many thanks for your comment! We make the mochi from rice flour (shiratamako in Japanese). For the first time it is a little bit dificult but please challenge!!
